However, no one should be surprised that even vegetable soup can have a meat stock as its base.

The soup is nothing more than a decoction of food boiled in water. We owe its taste to what we put in the pot, including the necessary spices. It is perfectly combined with pasta, because it is a fantastic room for maneuver for all food products.

Two simple recipes: both pasta and soup come together to create a valuable meal. This dish is especially important in winter, because the amount of nutrients and its hot temperature: they perfectly warm up on frosty afternoons, giving you energy for the whole day.

Noodle soup – a simple and quick recipe for a valuable meal

The pasta soup recipe described below comes from Malaga and is inspired by the Spanish Mediterranean diet, with vegetables and fish typical of southern Spain. 

Japanese noodle soup

As it is easy to notice, the presented soup is a delicious combination of ingredients that often have nothing to do with each other in our eyes.

Ingredients

  • Onion
  • Green pepper
  • 3 cloves of garlic
  • 2 ripe tomatoes
  • 1 packet of frozen squids (200 g)
  • 1 or 2 fish fillets for the broth (200 g)
  • ⅔ cup of peas (100 g)
  • 1 teaspoon of sweet pepper (5 g)
  • 4 cups of fish broth (1 liter)
  • ¾ cup of short noodles (150 g)
  • 1 bay leaf
  • ½ cup of olive oil (100 ml)
  • Salt
  • Pepper
  • Water (essential)

Preparation of the soup

  • First, finely chop the onion, pepper and garlic cloves. Combine everything with olive oil and then cook the sauce using the ingredients.
  • When it becomes homogeneous, add the chopped tomatoes and stir constantly. Wait 10 minutes and set aside when the products become sufficiently soft and integrated.
  • Meanwhile, boil water in a pot, add salt to it.
  • Clean the skin and bones of the fish. If you want to give the soup a more distinctive flavor, you can leave some fish bones in the broth.
  • Add sweet pepper to the sauce boiling in a pan, then pour everything into boiling water.
  • Time to remove the skin and bones from the fish that we left in the broth for a while. We don’t want someone to choke while tasting your signature dish.
  • Then add the remaining fish, peas and pasta.
  • Leave the ingredients for 8 or 10 minutes until the pasta is properly cooked.

Noodle soup – a traditional recipe

Time for a traditional noodle soup. It is somewhat reminiscent of the Polish broth served on the Sunday table, but there are some significant differences in it. The recipe is extremely simple, and most importantly, it will not take us more than 30 minutes.

Ingredients

  • 2 ½ cups of pasta (300 g)
  • 1 portion of pork loin (200 g)
  • 4 tablespoons of fried tomato (60 ml)
  • 1 tablespoon of onion sauce (15 g)
  • 1 green pepper
  • Garlic and parsley
  • 1 tablespoon of oil (15 ml)
  • Salt
  • Bones
  • Water (essential)

Preparation

  • First, brown the meat by frying it in olive oil.
  • Then: add the onion and finely chopped paprika to the pan. Do not leave the dish on even for a moment and constantly mix all the ingredients.
  • To top the sauce: add the fried tomatoes and let it sit for an extra minute.
  • Meanwhile, boil the meat bones in salted water. Cook for about 10 minutes, then add the fried mixture to the resulting broth.
  • The next step is to include garlic and parsley.
  • Increase the heat, add the noodles and let the soup simmer for a few more minutes.
  • From the boiling point of the soup – leave it on low heat for 10 more minutes. Enjoy your meal!
